Prevalence and antibiotic resistance of Salmonella spp. and Staphylococcus aureus strains isolated from sandwiches sold in schools in the city of Maradi (NIGER)

Abstract

Foodborne illness refers to any condition arising from the ingestion of food contaminated by toxigenic agents, including pathogenic microorganisms and/or their metabolic products. This research sought to appraise the microbiological quality of sandwiches marketed in educational institutions across the urban area of Maradi, focusing on the antibiotic resistance of Salmonella spp. and Staphylococcus aureus strains isolated from these samples.

A descriptive,  cross-sectional design  was employed for this study, conducted between April 6 and October 5, 2023. A total of 133 sandwich samples were procured from 21 schools across four districts in Maradi. All samples were subjected to microbiological analyses in accordance with standardized laboratory protocols. Lab tests confirmed the presence of Salmonella and Staphylococcus aureus in the samples. Out of 133 sandwiches, Salmonella reached a prevalence of 8.27% (n=11), while Staphylococcus aureus was detected in 9.77% (n=13) of the cases. What is particularly alarming being that the Staphylococcus bacteria were 100% resistant to a long list of common antibiotics, including penicillin and ciprofloxacin. As for Salmonella, almost all cases (91%) were resistant to azithromycin, though most remained treatable with ceftriaxone.

The presence of Salmonella and Staphylococcus aureus in these sandwiches is a clear sign  that food  hygiene rules are not being respected by  vendors. More importantly, the fact that these bacteria are resistant to common antibiotics is a serious warning: it means that the usual medicines might not work if a student gets sick. Improving hygiene in school food stalls is no longer just a choice, it is a medical necessity.
